Fresh Chilean cherry parfait

Ingredients:

  • 4 cups fresh Chilean cherries, split
  • 1/2 teaspoon finely grated fresh lemon zest
  • 1-2 teaspoons of sugar, depending on the natural sweetness of the cherries.
  • zest of a small lemon
  • 2 cups cold heavy cream (Greek yogurt is also a good alternative)
  • 2 teaspoons vanilla extract
  • 1 teaspoon light agave nectar or powdered sugar
  • 4 sprigs of fresh mint

Recipe:

Remove the pits from 1 cup of cherries and place them in a small food processor, along
with the lemon zest and sugar. Puree and reserve the sauce while you prepare the rest of the dish.
Reserve 4 of the nicer whole cherries and set them aside for garnish later. Remove the
pits from the remaining cherries and cut them in half. Whip the cream, add the agave sugar and
the vanilla. Taste and adjust the flavor to your liking. (Note that if you are working with
very sweet, ripe cherries you may not want to add any sweetener to the whipped cream.)
Layer the whipped cream, cherry sauce and fresh cherries. Top each tart with
a sprig of mint and a beautiful whole cherry. Serve them right away or you can make them with
in advance, cover with cling film and refrigerate until dessert time.
Serves 4 people.
