Ingredients
This recipe is fast and easy for a regular weekday dinner, but fancy enough for a special occasion! If there are any leftovers, try making a delicious sandwich the next day.
1 tbsp (15 mL) neutral oil
1 tbsp (15 mL) real maple syrup
2 tsp (10 mL) fresh ginger, minced
1 clove garlic, minced
1/4 tsp (1 mL) each salt and pepper
2 pieces salmon fillets (approx. 70 g or 2.5 oz each)
1 Peach from Chile, pitted and sliced thin
1/3 cup (85 mL) red onion, finely diced
Optional garnish: fresh cilantro, chopped, sesame seeds
Directions
Preheat the oven to 425°F (220°C). Line a baking pan with parchment paper.
In a small bowl, stir together oil, maple syrup, ginger, garlic, salt and pepper.
Place the salmon fillets in the pan. If they have skin, place them skin side down. Spread half of the dressing over the salmon.
Evenly layer peaches on top and sprinkle with onion. Gently spoon the remaining dressing over the fish.
Roast for about 20 minutes, until the salmon is opaque throughout, and starts to flake when pulled apart with a fork.
Serve hot. If desired, garnish with fresh chopped cilantro and sesame seeds.
Tips: You may substitute honey for the maple syrup. A nectarine from Chile could also be used in place of the peach.
