Ingredients
- 1 1/2 cups buckwheat flour
- 3 tablespoon coconut sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- generous pinch of kosher salt
- 1 3/4 cups buttermilk
- 1 teaspoon vanilla extract
- 1/3 cup melted coconut oil
- 1 large egg, whisked
- 2 additional egg whites, whisked until soft peaks have formed
- Citrus butter:
- 1 stick butter unsalted, at room temp
- 1 teaspoon powdered sugar
- 2 teaspoons finely grated orange zest
Directions
- Citrus Butter:
- In a small bowl, mash all ingredients together with a fork. Place citrus butter in a ramekin. Cover and refrigerate.
- Preheat your waffle maker.
- In a large mixing bowl, combine all dry ingredients: buckwheat flour, sugar, baking powder, baking soda, and salt. Then stir in buttermilk, vanilla extract, melted coconut oil, and whisked egg. Finally, gently fold in egg whites. Don’t overmix – the batter should be streaky with egg white.
- Let the batter sit for 10 minutes before pouring it into the waffle maker.
- Make waffles as per the instructions on your waffle maker. Serve with citrus butter, sliced oranges, and warm maple syrup.
- For serving:
- Warm maple syrup
- 4 large navel oranges or 6 mandarins, peels removed and sliced into pinwheels
