Clementine Yogurt cake

If you’re looking for a simple cake recipe that is delicious, but different, try this It’s texture is quite dense and somewhat creamy with a hint of citrus. It would pair perfectly with afternoon coffee.

Ingredients:

  • 3 Chilean clementines (peeled) You can also use mandarins.
  • 1 1/2 cup all-purpose flour
  • 3/4 cups granulated sugar
  • 1 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/3 cup vegetable oil
  • 2 teaspoons vanilla
  • 2/3 cups Balkan-style plain yogurt

Directions:

  1. Prepare cake or loaf pan by lining with parchment. Preheat oven to 350 degrees F.
  2. Blend peeled clementines until smooth, set aside.
  3. In a large bowl, stir together flour, sugar, baking powder, baking soda, salt. Then add in eggs, oil, vanilla and yogurt. Stir to combine. Add pureed clementines, combine well.
  4. Pour into prepared cake pan and cook for approx 45 minutes until toothpick comes out clean.
  5. Stores well in airtight container for several days.
  6. *Optional glaze when hot and out of the oven. Stir 1 tbsp fresh lemon juice with 3 tbsp icing sugar. Poke holes with toothpick around cake, then evenly drizzle glaze to cover.
  7. Note: We did not remove pits from the clementine segments; rather just blended the entire fruit (without the peel).
