If you’re looking for a simple cake recipe that is delicious, but different, try this It’s texture is quite dense and somewhat creamy with a hint of citrus. It would pair perfectly with afternoon coffee.
Ingredients:
- 3 Chilean clementines (peeled) You can also use mandarins.
- 1 1/2 cup all-purpose flour
- 3/4 cups granulated sugar
- 1 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 eggs
- 1/3 cup vegetable oil
- 2 teaspoons vanilla
- 2/3 cups Balkan-style plain yogurt
Directions:
- Prepare cake or loaf pan by lining with parchment. Preheat oven to 350 degrees F.
- Blend peeled clementines until smooth, set aside.
- In a large bowl, stir together flour, sugar, baking powder, baking soda, salt. Then add in eggs, oil, vanilla and yogurt. Stir to combine. Add pureed clementines, combine well.
- Pour into prepared cake pan and cook for approx 45 minutes until toothpick comes out clean.
- Stores well in airtight container for several days.
- *Optional glaze when hot and out of the oven. Stir 1 tbsp fresh lemon juice with 3 tbsp icing sugar. Poke holes with toothpick around cake, then evenly drizzle glaze to cover.
- Note: We did not remove pits from the clementine segments; rather just blended the entire fruit (without the peel).
