Ingredients
Crust(if desired)
3/4 cup vanilla wafer or graham cracker crumbs
2 Tbsp. Ground almonds or Pistachios
3 Tbsp. butter melted
Filling
1 cup lemon greek yogurt
1 can condensed milk
1/3 – 1/2 cup freshly squeezed lemon juice or combination of lemon/lime/orange
1 cup whipped cream
zest of one lemon or combination of citrus
honey or agave syrup to sweeten to taste
Directions
- Combine wafer crumbs, groundnuts and butter Mix well. Press into 6” springform pan, set aside.
- Place yogurt, condensed milk, lemon juice in blender and mix until smooth
- Whip cream and fold into yogurt mixture with lemon/citrus zest
- Taste test and add more lemon or sweetener to taste
- Pour into crust, and freeze until firm, about 4 hours.
- When ready to serve, remove from springform pan and decorate with lemon/lime/orange slices as desired.
- Remove from the freezer 20 minutes before serving.
