Ingredients
- ½ head large cauliflower, separated into 1-inch florets
- 3 tbsp olive oil
- Salt & pepper, to taste
- 1 tsp ground Cumin
- 2 tsp Chili Powder
- 2 cups Grapes from Chile (We used Green, Black and Muscat Grapes but even two varieties would taste great), cut into bite sized pieces
- 3 green onions, finely chopped
- Juice of 1/2 lemon from Chile
- (Optional) Chopped Fresh Herbs like Parsley or Cilantro
Directions
Trim the cauliflower florets, cutting away as much stem as possible. Break up the florets and pulse in a food processor until the mixture resembles rice.
Heat the oil in a large skillet over medium-high heat. Add garlic until fragrant (1-2 minutes), then add the cauliflower, stirring to combine. Add salt, pepper, cumin and chili powder, stirring frequently until the cauliflower has softened, 3 to 5 minutes. Remove from the heat.
Transfer cauliflower into a large serving bowl. Add green onion and grapes, garnish with herb(s), and sprinkle with fresh lemon juice before serving.
Cauliflower rice has never tasted this good before!
TIP: To save time, buy prepared or frozen cauliflower rice
