Cherry Swirl Yogurt Bark

Ingredients

  • 2 cups vanilla Greek yogurt
  • 1 scoop vanilla protein powder
  • 1/3 cup dark chocolate, melted
  • 1 cup pitted and sliced Chilean cherries

topping:

  • unsweetened coconut flakes
  • toasted almonds
  • cocoa nibs

Directions

1. In a bowl, mix together yogurt and protein powder.

2. Line a small freezer-safe pan with parchment paper. Spread yogurt mixture out over parchment, so it’s about 1/4 inch thick. Drizzle melted dark chocolate over yogurt, and, using a tothpick or knife, create swirl designs in the yogurt.

3. Top with cherries- pushing them down a little in into the yogurt. Sprinkle on coconut flakes, toasted almonds, and cocao nibs.

4. Place in the freezer until completely frozen, about 2 hours. Remove and break into pieces.  Enjoy immediately, or place Yogurt Bark in a freezer-safe container and enjoy as a snack or throw into a smoothie.
